Organic and Shade-Grown
Los
Lajones is grown in Panama's Boquete region at the dizzying altitude
of 6,500 feet by our friend Graciano Cruz, a pioneering organic agronomist
who has championed the organic coffee movement throughout Central America
and most recently, Ethiopia. At this year's Best of Panama competition,
Phil Anacker visited with Graciano to learn more about his unconventional
approach to growing and processing coffee. In addition to his prize-winning
wet-processed coffee, Graciano has recently been experimenting with
dry and semi-dry processed lots as well. We tried the three different
coffees and were very impressed with each one, albeit for different
reasons. We decided to buy all three of them. This is a unique opportunity
to try one coffee, harvested from Caturra and Catuai trees on the same
farm, but processed three different ways.
The
Los Lajones Estate wet-processed coffee is medium roasted
to bring out its clean and bright highlights. Medium-bodied with notes
of peach and a floral-toned finish. Clean and delicate.
The
Los Lajones "Honey Bean" is a pulped natural
coffee dried on Ethiopian-style drying beds (just like our Costa Rica
Lomas al Rio Honey Coffee). Fuller-bodied than the wet-processed, and
with similar ripe peach and floral notes, but with distinct caramel
in the finish. Limited supply.
The
full natural coffee from Los Lajones is truly unique:
a high grown Panama harvested and dried in full cherry on Ethiopian-style
beds. The result is intense ripe berry fruit and gingerbread. Similar
(but better) than the best Yemen coffees. Very limited supply.
